Texas sheet cake is a classic southern chocolate cake recipe, and it is SO easy to make! Perfect recipe to make for an easy dessert, birthday cake, or just because.

Sometimes something is so sweet, funny and completely real that is simply MUST be shared!  This particular birthday was sweet in more ways than one. Not only did my son make me the BEST card- my mom also gave me her prized Texas Sheet Cake recipe!

Texas Sheet Cake and a handmade card for your birthday- what more could you need?

Thursday my son gave me a card for my birthday.  Well, he did more than give it to me. One day, he rushed home from school, locked himself in his room and made me a a birthday card.  He then made me swear to stay out of his sock drawer.  Since he is 8, I complied with his wishes.  It was so cute to see him have this juicy little secret, so I didn’t want to ruin it for him.

Thursday after school , when we got home, he handed me his handmade card.  On the front was attached a Post It note.  He is really into these, leaving us little notes all over the house – on the TV or at his place at the table.  Some are funny and some are complaints. The last one was left on the washer.  It said “Please wash my robe…it has been in here for 3 days and I want it back“.  You would just have to know him, I think.

So I was not altogether shocked when I read his ‘little gift’.  But let me assure you….I will save it forever!

Front of the handmade birthday card from my son.

Inside…not sure what he means by ‘She’s always pleasing…and never teasing” So funny…

AND…this is where I said ‘Huh’ ? Where did this come from?.

The back…with fireworks

So I have to say…this really made my day.  My 12 year old kissed me on the cheek after we picked him up from his cross country meet.  That was big..he never does that. ????

This is my Mother’s recipe for Texas Sheet Cake.

I think I have asked for it every year for as long as I can remember and for as long as I can remember, she has made it for me!  It is so good and so rich but perfect for a get together or..well, for a birthday.  She even made it for me in a pan that I can keep!

  • 1 C HOT water
  • 1/4 C unsweetened cocoa powder
  • 2 C Sugar
  • 2 C Flour
  • 1/2 tsp Salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 Eggs
  • 1/2 cup sour cream
  • For Frosting
  • 8 TB butter
  • 1/4 C unsweetened cocoa
  • 1/2 C milk
  • 2 C confectioner’s sugar
  • 1 tsp vanilla
  • chopped nuts (optional)

Instructions

  1. In a small bowl, add the dry ingredients and preheat the oven to 350 degrees F.
  2. Melt butter in a small saucepan.
  3. Add 1 cup of hot water and 1/4 cup unsweetened cocoa. Whisk this to mix, then bring to a boil.
  4. Remove from heat and add the dry ingredients.
  5. When almost completely incorporated add the eggs, sour cream and vanilla.
  6. Mix well with an electric mixer, then pour into a greased jelly roll pan and bake for 20 minutes.
  7. While it is baking you need to get the icing ready so you can pour it on the warm cake when it comes out of the oven.
    For the Frosting
  8. Melt butter and cocoa and milk in a small saucepan.
  9. Bring to a light boil and add confectioner’s sugar and vanilla.
  10. You can add 1 cups chopped nuts of your choice to the frosting now if you want.
  11. Pour and spread on hot cake.
  12. Spread the icing out to the edges of the cake so it is completely covered.
  13. Then the icing sort of sets as it cools, so you have to make sure it is covered before it gets too cool.
