I promise, this is the last reference I will make to this crazy month of September that I affectionately call ‘Birthday Month’ !

But this versatile dessert is hard not to rave about.  The basic formula is my go-to quick dessert.  Sometimes I pour it in a pie shell or put it in a decorative bowl to bring to a get-together to use as a fruit dip.  My favorite way is to get small ‘shot-sized’ glasses and layer it with shaved chocolate and graham cracker crumbles.

This simple recipe is easily adapted if you would like to add pumpkin puree instead of the peanut butter.  Now, that makes a really tasty dip for little ginger cookies!

I was planning on making my husband a Derby Pie for his birthday on Wednesday. I bought all of the ingredients and asked him several times if he was sure that was what he wanted.

Wednesday morning when he woke up, as I was making him his annual birthday breakfast, he asked for a peanut butter cream pie instead.  He said it just sounded good.  I was only too happy to oblige.  It is not often he specifically asks me to make food for him.  Plus, it was not long ago that many of us in the food world celebrated the life of Mikey Perillo ,the late husband of Jennifer Perillo,  the creator of In Jennie’s    Kitchen.
He suddenly and without warning passed away in early August.  Her request was that we hold tight to our families and celebrate the well lived life of her late husband by making our families his favorite dessert: Peanut Butter Cream Pie.

So I found it ironic that he made this request.  I not only granted his wish….I made two.

This normally sets much more firm…I used a little more Cool Whip this time….accidentally!

Peanut Butter Cream Pie
This makes 2 pies
1/2 tub of low fat Cool Whip or make whipped cream. I have done it both ways…but for the sake of time I typically use Cool Whip.  Come on…you know you like it ????

1 low fat cream cheese block, softened

1 C peanut butter, low fat (do not use the natural kind…not the best results)
3/4 C skim milk
1 1/2 C powdered sugar
2 prepared pie shells or ‘dish’ of your choice.

In a bowl whip the cream cheese, then add the powdered sugar.  Whip to combine.  Add the peanut butter, combine.  Add the milk..same thing..whip to combine.  Add this to your pie shells and refridgerate.

Enjoy ???? This is not what you would call a ‘healthy’ dessert.  But man, was it good!
