Last night as I logged into facebook I saw that an old friend from high school, Heather (Butler) Heckler mentioned making a dessert with her daughter.  I was intrigued not only that she made something that sounded very tasty but also that she called it “Blueberry Thing”!  I had  to know what it was!  So I asked her to send me the recipe along with a picture and in return I would post it for her ????

Thank you, Heather!  This recipe looks great and I will be making this with the blueberries I pick tomorrow!

Blueberry ‘Thing’ ala Heather Heckler


CRUST:
3 cups flour
1. T sugar
1 1/2 tsp. salt
1 cup vegetable oil
4 1/2 T milk

Mix all ingredients together until well-blended. Pat 2/3 of the mixture on the bottom and about 1 inch up the sides of an ungreased 9X13 inch pan

FILLING:
5-6 cups blueberries (fresh or frozen)
1 1/3 cups sugar
4 T flour
1 T tapioca (small pearl)
2 T lemon juice
Dash of salt
4-5 T butter

Toss blueberries with sugar and flour. Add tapioca, lemon juice and salt. Spoon onto crust; dot with butter pieces. Crumble remaining crust mixture over berries. Bake at 450degrees for 10 minutes; reduce heat to 350degrees and continue baking for 40 minutes. May be served warm or cold. Serve with vanilla ice cream or whipped cream.

Best the first day. Serves 12-15.
