Cheesy Egg Breakfast Croissants {Budget Meals}

Cheesy egg breakfast croissants are the perfect little bite for breakfast, brunch, an afternoon snack, and even for dinner. 4 simple ingredients and 15 minutes is all you need to put this quick and easy meal together.

Earlier today, my Husband called me to tell me he has a work function and he’ll be home late.  I had plans to go grocery shopping after school, and get some things to make for dinner, but now I’m parenting solo.  Stopping for groceries was no longer an option, because my son needed to get back out the door by 5:30 for swim practice.

So, on the way home, I shared my dilemma with my son, then I asked him what he wanted for dinner. He said “Mommy, you make your best dinners when you are in a hurry and you throw something together”.  I almost cried that he had noticed!  It’s one thing for your family to slurp down the food you make as a sign that they love it. But when they acknowledge that you were in a hurry, and that they know you tried your best to get a meal on the table, that’s special!

Basking in the glow of his compliment, I went home with a renewed vigor. I was up for the challenge to make something delicious and wholesome with very few ingredients.  I surveyed the contents of the pantry and refrigerator, spying eggs, cheese, bacon and croissant dough.

An idea formed, and I decided to make cheesy egg breakfast croissants.

It is slightly embarrassing to show you this recipe.  It is almost like showing a recipe for how to prepare a bowl of breakfast cereal. ????
What you’ll need in order to make these cheesy egg breakfast croissants:

Preheat oven according to package directions.
Prepare a cookie sheet with parchment paper.  Unroll the croissants and place them flat onto the parchment.  You may need to press them out a little.

Sprinkle with the cheese of your choice, but be sure not to over fill them.

Add about 1/4 cup of scrambled eggs to each croissant.

Roll the dough up leaving no gaps, then brush each one with melted butter.

Bake until golden brown, about 13 minutes.

My son ate his cheesy egg breakfast croissants with leftover beans and rice from our dinner earlier in the week.
