With recipes as simple as can be- you can provide your family, your friends OR yourself with a home cooked meal- and fast. That is what we are all looking for, right?
This recipe is for spaghetti soup. I knew my sauce loving husband would be over the moon about this recipe and he was. It takes the best of what you love about spaghetti and lightens it up a bit by using less pasta- yet you still get that carb need satisfied. Use lean ground meat for this and in this particular instance I substituted crushed tomatoes for diced. You know, for my picky child who will not eat chunky tomatoes
In a few easy steps this can be on your table. This serves 4-5 as a main dish and a simple salad would go great with this meal.
- 1 lb lean ground beef
- 1 onion, chopped
- 2 stalks celery, diced
- 1 green pepper, diced
- 2 carrots, peeled and chopped
- 2 cloves garlic, minced
- 5-6 C water
- 2 14 oz cans of diced tomatoes
- ½ tsp Italian seasoning
- ½ tsp salt
- ¼ tsp pepper
- ½ C spaghetti, uncooked and broken into pieces
- In a large skillet over medium heat, cook beef and onion, celery, carrot, pepper and garlic until beef is brown.
- Drain if necessary.
- Add water, sauce, tomatoes with juice and seasonings.
- Increase heat to medium-high.
- Bring to a boil.
- Stir in spaghetti.
- Cook for 10-15 minutes or until spaghetti is tender.
